KEELAN’S DARK CHOCOLATE QUINOA CUPCAKES RECIPE (GLUTEN & DAIRY FREE)

If you’re like me, you love chocolate cake and if you don’t well you’re a terrible liar. But no one loves the guilt that follows annihilating a coma-sized slice of cake, so here’s a healthy alternative to help you fit into your pants the next day.

What You’ll Need:
-2 cake pans
-2 cups cooked quinoa (cold)
-3/4 cup coconut cream
-4 eggs
-1/3 cup almond milk
-1 ¼ cup organic coconut palm sugar
-1 cup cocoa powder
-1 ½ tsp baking powder (gf)
-1/2 tsp sea salt
-1/2 cup melted dark chocolate

Directions:

Preheat oven to 350 degrees(F), rack in the middle, oil-up your cake pans and place in the oven for 30 seconds before pouring mixture in.

In a blender, mix cooked quinoa, coconut cream, eggs, and milk until smooth. Then, in a mixing bowl, whisk sugar, cocoa powder, baking powder, and salt together. Pour blender mix into the bowl and whisk together, then fold in the melted dark chocolate.

Bake for 40 minutes and let rest for 15 minutes before the gluttony!
