KEELAN’S VEGAN QUINOA BROWNIES 

Believe it or not, desert can taste good and be healthy! These quinoa brownies are not only gluten free, dairy free, and vegan, but also the most deliciously moist brownies you’ll ever eat.

What You’ll Need:
-1 cake pan
-1 tsp Earth Balance vegan butter
-1 banana
-2 cups cooked quinoa (cold)
-2/3 cup almond milk
-3/4 cup coconut milk
-1/2 cup melted pure dark chocolate
-4 tbsp chia seeds
-1 cup cacao powder
-2 tsp baking powder
-2 tbsp stevia (more if you want them sweeter)
-pinch of salt

Directions:
Preheat oven to 350 degrees(F) with the rack in the middle. Using the vegan butter, grease up your cake pan and place in the oven for 30 seconds before pouring the finished mixture in.

First, stir your chia seeds in with the coconut milk and let sit for 10-15 minutes to absorb. Then, in a blender, mix wet ingredients (including the banana and melted chocolate) until smooth. Next, pour your wet mixture into a mixing bowl, whisk in all dry ingredients and pour into your pre-heated greased cake pan.

Bake for 25 minutes and then let rest for 25 minutes before the gluttony!
